Apple, Cranberry & Almond Mason Jar Salads
I have decided that after having kids I have gotten myself into a few routines. Kids like to have routine schedules and I think this has also made me have more structure in my life as well. One of the routines I have gotten myself into is meal prepping on Sundays for the work week. This has made a huge difference on giving us more time back at night and it actually helps us save money. Since we are prepared Monday-Friday we don’t go out to restaurants and grab a bite to eat during lunch or at night because we ran out of time and need to eat. One of meals I have been making recently are mason jar salads for our lunch. I must say this salad is one of my favorites.

6 32 oz wide mouth mason jars 1 lb Chicken breast tenders 3 Apples 6 Celery stalks 1 cup sliced almonds 1 cup dried cranberries 3 Green onions chopped 10 cups arugula Your favorite Poppy Seed Dressing (2 Tbsp. per jar) Directions
1. Season chicken breasts tenders on both sides with salt and pepper then sauté in a nonstick sprayed skillet over medium-high heat until cooked through. Cool completely then chop into bite-sized pieces – this step can be done ahead of time or while you are chopping the apples and celery. 2. Chop celery, apples and green onions 3. Assemble all the ingredients into the jars by layering in this order: dressing, celery, cranberries, apples, chicken, sliced almonds, and arugula. That’s it! These salads are so easy to make and take very little time. I believe I was able to get these all done in about 30 minutes while I was also watching my toddler paint at the kitchen table. Which I think the clean up from my son takes way longer than the clean up from my meal prep 🙂 I hope you enjoy these easy to assemble mason jar salads!
